What you knead

This is my journey through Baking and Pastry School. I hope you enjoy the stories, the photos and just randomness about me in the kitchen. --adam

Fresh food and camera phones.

A good meal is only as good as the ingredients you use.  If you skimp when adding the ingredients at the beginning, your final meal will just be well..meh at best.  This might be a simple well known philosophy, but learning to stay true and respecting one’s craft is what I believe makes you better.

I was in the kitchen yesterday when a special delivery arrived.  A box of carrots.  Pretty simple.  OK, actually it was a box of locally grown, organic carrots.  They were beautiful.  More than beautiful.  They made me stop and just stare at them in awe of the different colors.  The scent was so very fresh and delicate that I wish I had my camera that day.  Sadly it was at home charging, so very sad.  Well no fears, camera phone it is, but please beware.  This photo does not truly capture how beautiful these carrots were.  The chefs all gathered around and were in more awe of these than I, if that really was possible.  They discussed what to do with these and how they can truly make the most out of just these carrots.  Am I obsessing a little too much about carrots, sure, but if this ingredient is that fresh and they took the time to discuss how to cook these to perfection, imagine what the rest of the meal was like.

So what am I learning during my externship?  Locally grown.  Organic.  Fresh.  Staying true to your craft and love what you do.  Please take your pick of answers.
