48 hours later….
After being in Denver for two days now, I can safely say, I love it. I love it more than I thought. There is so much to see and do; I don’t know how I am going to get it all done in 10 weeks! First things first. This week is Denver Restaurant Week where more than 240 top restaurants will offer their best culinary dish. What a week to be introduced to Denver’s culinary world. Of the 240 restaurants participating, I would venture to guess well over half of them are independent. Score.
I will get to Rioja and Bistro Vendome in due time. Dinner first. The first night took me to Il Posto. This is a neighborhood restaurant that boasts “The complicated simplicity of Italian food and wine”. If this is what Denver has to offer, then ten weeks just simply won’t be enough time for me to truly enjoy. Main course: Wild Boar belly, braised in Barbera and leeks, cauliflower soup with saffron. Dessert was pretty solid as a whole, but the main course definitely stole the show. It was a small, quaint and beautiful place that I will return to in the near future. I am not sure what tonight will hold, but you better believe I will share.
After Il Posto, it was off to have a pints just down the street at yet another watering hole. Did I mention they like their beer here? So many beers, so many brewery, so little time. Speaking of which, it’s time for a pint and getting ready for dinner. I am not sure what I will do once I have to start working, but for now, I am so enjoying Denver.
